The definition of perfection is "the state of being without a flaw." It is a fitting description of Crofton on Wells. The dining room is serene and comfortable. The staff is attentive and knowledgeable on both the menu and wine list. A dinner here is special. From the warm crusty rolls to a lovely cup of coffee or tea, everything is wonderful. The soups and salads are innovative and seasonal. It seems impossible that either could taste so delicious, but Crofton makes it possible. The entrees such as Amish chicken, venison, beef tenderloin are wonderful. However, the bbq pork tenderloin with apple chutney, corn pudding and poblano cream is heaven on earth. Make sure to leave room for desserts because they are not to be missed. Crofton's training with Jean Banchet shows in her preparation of creme brulee. Other favorites are the bittersweet chocolate cake and apple tart. This is a first rate dining experience. Perfect for a romantic dinner. But remember, the food is addictive and unforgettable, you'll want to eat there as often as possible.

First, I'd like to comment that the last patron probably did not get a response from Chef Wells because the chef's name is Suzy Crofton.
Chef Crofton not only makes excellent dishes in her establishment, but you can also experience her and her cooking first hand during Williams-Sonoma's cooking classes in the summer.
She's a wonder woman, with great heart and an amazing ability to put together ingredients in a way that leaves you hungry for more.
I highly recommend her to anyone who wants to try something different. She's what home cooking with a twist is all about. And that twist is something no one on a quest for great food in Chicago should miss.
