As my friend and I walked in the door, the staff, which looked like a group of ageing friends, pulled out of one of the ovens some hachapuri. Needless to say, we each ordered one ($2.00 each) and sat at one of the two tables to eat. The hachapuri were fantastic, the pastry was tender and flavorful and the cheeses on the inside were, well, wow. As we were nearing the end of our hachapuri we noticed they were doing something with the main oven. They were starting to bake the bread and since the oven is vertical I was more than a little excited to see how they did it. Each loaf was whacked against the wall, where it stuck, and pulled of mere moments later once it was just starting to brown. We ordered one of the baguette shaped loves as soon as it came out ($1.60) and being just thirty seconds old, ate it with pleasure. It was in fact very unlike a baguette, denser and saltier primarily, but one that I will be going to get again very soon. I loved it.
