I suggest you try someplace else. Although I don't have a huge amount of experience with 4+star restaurants, my wife and I do enjoy treating ourselves now and then. We've been to Ambria twice now. The first time, we were somewhat disappointed. I was especially surprised at how little attention the wait staff gave us. That was probably almost two years ago, now. We just went back this month. Frankly, we were given a gift certificate, and wouldn't have returned otherwise. But, we figured, the first time must have been a fluke. It wasn't. The service was worse than I remembered. Nice enough people, but they seemed too busy for us. And, the place wasn't even that crowded, especially for a Friday night. Someone said you get better service at McDonalds. That's hyperbole. But, I've had much better service at chain restaurants in the suburbs that charge a tenth of the price, and that's no exaggeration. (This last time, dinner cost us well over $200 with one glass of wine between the two of us.)
The food is the eclectic hit-or-miss kind of stuff you expect from a high-end restaurant. It's hard to say that our experience would be the same as yours--one man's trash is another man's treasure, as they say. But, with fancy-restaurant standards such as the above mentioned goose liver (foie gras if you like) we agreed that others do it better. I have to admit that the soufflé was awesome; which was good because I was still hungry by the time this fifth-course came.
